Gritman Dining Recipes Add Flavor to Exceptional Care

Todd Unger, our Dining Services Director, has graciously agreed to share two of our patients’ favorite recipes as a way to bring a little Gritman into our region’s kitchens this fall.
Gritman’s famous Greek Lemon Soup is a favorite of Moscow-area events and a staple of the Courtyard Café each and every Wednesday. Our Gritman Muffins are among dozens of delectable treats available for purchase at the café and regularly delivered to patient rooms—full of fruit and nut flavors that change with every season.
While we can’t gather together at the hospital, we hope these seasoned staples provide a taste of the savory offerings served through the Courtyard Café until we can get together again.
Greek Lemon Soup
- 8 cups chicken broth
- 3 cups diced cooked chicken
- ½ cup lemon juice
- 1 ½ cups orzo pasta
- 1 tablespoon dill
- 2 cups half-and-half or milk
Bring the chicken broth, diced chicken and lemon juice to a boil. Add the orzo pasta and cook for 6-7 minutes, or until the pasta is done. Add the dill and half-and-half or milk. Stir after adding the milk but do not boil or it will curdle.
Yields: 12 servings
- 3 ½ cups flour
- 2 tablespoons baking powder
- 1 ½ teaspoons baking soda
- 1 teaspoon salt
- 2 cups sugar
- 1 cup oil
- 6 eggs
- 6 cups buttermilk
- Cook’s choice berries and/or nuts
Mix the dry ingredients. Pour the wet ingredients over the dry ingredient mixture. Mix until combined, then add berries or nuts of choice. Cook at 350 for 18-20 minutes.
Yield: 24 muffins.
